Koshuhanten in Tsubame: Thick Noodles and Backfat Ramen

A bowl of ramen topped with chopped onion and slices of pork in a rich-looking broth.

Koshuhanten (杭州飯店) in Tsubame offers a distinctive ramen combination: niboshi-rich soy-sauce broth, pork backfat, extra-thick noodles and chopped onion. Come for a bowl that connects a food detour in Niigata with the region’s metalworking story.

Why visit

Tsubame backfat ramen has a practical history behind its rich appearance. The Tsubame Tourism Association explains that the style developed around deliveries to busy local metalworkers: backfat helped the soup retain heat, while thick noodles resisted softening on the way.

Koshuhanten’s extra-thick noodles and onion-topped, niboshi-rich broth make it a compelling place to explore that regional style.

Plan your visit

Find Koshuhanten at 49-4 Tsubame, Tsubame City, Niigata. For a straightforward first order, consider chuka soba; chashu men is another option if you want the pork-focused choice.

Make the most of your visit

Try the standard bowl as your introduction to the combination of thick noodles, fish-based broth and backfat. If onion is part of the appeal, the menu lists extra onion for ¥100; large servings are also listed at an additional ¥100.

Choose portions for each diner rather than planning to split dishes: the menu asks customers to refrain from sharing.

Planning notes

Weekday lunch, 11:00–14:30, is the consistent window across the listings reviewed. The official prefectural ramen guide checked on 6 October 2026 and Google Maps viewed on 2 October 2026 both list Monday closure.

Evening closing times conflict between those sources, and current evening hours and holiday exceptions have not been directly confirmed with the restaurant. Check with the shop before travel, especially for evenings or holidays: telephone 0256-64-3770.
